Vegetable juice is a popular drink all over the world. Vegetable juice is an alternative to fruit juice and is usually healthier, given that it contains less sugar.

Most commercial brands do however contain a large amount of sodium.

If making vegetable juice at home, a juicer that can process vegetables will be needed. Unlike a citrus juicer or a blender, which are often used for making fruit juices, these types of juicers are considerably more complex, either employing a slow-geared grinding mechanism or a unit powered by centrifigal force to yield the juice.

They also can be laborious to clean. However, if you are more health-conscious, using a blender is prefered because you will be able to keep all of the fibers and nuturients from the vegetables.

Carrot juice is juice produced from carrots, often marketed as a health drink. Carrot juice has a particularly high content of Provitamin A (ß-carotene), but is also high in B complex vitamins and many minerals including calcium, copper, magnesium, potassium, phosphorus, iron, and folic acid. A pound of carrots will yield about a cup of juice, which is not a bad yield compared to fruits like apples and oranges.

However, carrot pulp is very tough the main difficulty in juicing carrots is in separating the pulp from the juice.

Carrots have been made into soups and juices for hundreds of years. In fact, along with marigold petals, carrot juice was one of the first colorants used to make European cheeses more attractive. Even today, synthetic ß-carotene is commonly used to add color to cheese.

In Canada and Mexico, tomato juice is popular mixed with beer, the concoction is known in Canada as Calgary Red-Eye and in Mexico as Cerveza preparada. Tomato juice is the base for the cocktails Bloody Mary and Bloody Caesar, and the cocktail mixer Clamato.

Apart from the obvious use as a beverage, tomato juice's mild acidity means that it can be used to clean up old coins or metal saucepans in much the same way as other acidic substances such as Coca Cola are used.

Tomato juice is frequently used as a packing liquid for canned tomatoes, though it is sometimes replaced by tomato puree for international commerce due to tariff issues on vegetables vs. sauces. According to Cook's Illustrated magazine, tomatoes packed in juice as opposed to puree tend to win taste tests, being perceived as fresher tasting.

The juice was also thought to be an effective cleaning agent against skunk musk. However, its effectiveness was tested on MythBusters.

   
 
 
Juice fasts are commonly undergone with the intent of detoxification for greater health, the theory being that less energy is expended on digestion of foods; therefore more energy exists for the rest of the body to expel toxins. As toxins are believed to lie within many of the human body's eliminative glands and organs, different juice fasts target different sections of the body. For instance, a large portion of juice fasters believe that abstaining from solid food allows the body to recover and heal itself from damage and fatigue caused by the relentless stress of digestion. Others choose fasting because they want to target the liver, the kidneys, the urinary tract, the skin, the gallbladder, the brain, the immune system, etc.

Additional reasons for undergoing juice fasts include religous reasons, losing weight and attempting to wean oneself from unhealthy habits, i.e. smoking, drinking soda, overeating, caffeine addiction, etc. Some more serious participants use juice fasting as an alternative to conventional medical practices, i.e. as a healing technique for pain, cancer, depression, arthritis, severe infections that failed antibiotics, autoimmune diseases and many other supposedly incurable diseases.
